an egalitarian brownie that's low fodmap, gluten free, vegan and deeply, darkly, deliciously fudgy. because no one should have to go through life without the comfort of a really good brownie.
makes 24 squares
250 g (1 2/3 cups/ 9 oz) 70% dark chocolate chips
200 ml (1 cup/6 1/2 fl oz) olive or macadamia nut oil (or melted butter if non-vegan is ok)
2 large bananas, pureed
70 g (2 1/2 oz/2/3 cup) brown rice flour
30 g (1 oz/1/3 cup) oat flour
1 1/2 tsp baking powder
20 drops stevia
2 tsp vanilla extract (optional)
- preheat oven to 155 c (310 f)
- grease a 26 cm (10.5 in) by 18 cm (7 in) baking tray, or line with parchment paper
- combine chocolate chips and oil or butter in a large microwave safe bowl and microwave on "High" for 2 minutes
- remove from microwave and stir until completely melted and combined
- set aside to cool
- add remaining ingredients to chocolate and oil mixture
- stir gently with a whisk until just combined and pour into tray
- bake for 25 - 30 minutes
- remove from oven, cool and chill for a few hours to prevent crumbling, before cutting into squares
notes
- if you don't have or don't like stevia, replace with 4 tablespoons maple syrup or 6 tablespoons brown rice syrup
- if using syrups instead of stevia, add 5 minutes to the baking time
