gooey low fodmap gluten free brownies



an egalitarian brownie that's low fodmap, gluten free, vegan and deeply, darkly, deliciously fudgy. because no one should have to go through life without the comfort of a really good brownie.


makes 24 squares

250 g (1 2/3 cups/ 9 oz) 70% dark chocolate chips
200 ml (1 cup/6 1/2 fl oz) olive or macadamia nut oil (or melted butter if non-vegan is ok)
2 large bananas, pureed
70 g (2 1/2 oz/2/3 cup) brown rice flour
30 g (1 oz/1/3 cup) oat flour
1 1/2 tsp baking powder
20 drops stevia
2 tsp vanilla extract (optional)


  • preheat oven to 155 c (310 f)
  • grease a 26 cm (10.5 in) by 18 cm (7 in) baking tray, or line with parchment paper
  • combine chocolate chips and oil or butter in a large microwave safe bowl and microwave on "High" for 2 minutes
  • remove from microwave and stir until completely melted and combined
  • set aside to cool 
  • add remaining ingredients to chocolate and oil mixture
  • stir gently with a whisk until just combined and pour into tray
  • bake for 25 - 30 minutes
  • remove from oven, cool and chill for a few hours to prevent crumbling, before cutting into squares

notes
  • if you don't have or don't like stevia, replace with 4 tablespoons maple syrup or 6 tablespoons brown rice syrup
  • if using syrups instead of stevia, add 5 minutes to the baking time
