banana walnut loaf






makes a 10-slice loaf

wet

4 large ripe bananas, thoroughly mashed
1/2 cup olive oil
1/3 cup maple syrup
2 teaspoons vanilla extract
20 drops stevia

dry

150 g (5 oz) brown rice flour
75 g (2 1/2 oz) oat flour
3 1/2 teaspoons baking powder
100 g (3 1/2 oz) small walnut pieces



  • preheat oven at 160 c (320 f)
  • line loaf tin with non stick baking or parchment paper
  • combine all wet ingredients in large mixing bowl
  • whisk together dry ingredients
  • gently stir dry mixture into banana mixture until well combined but don't overmix
  • transfer batter to tin and bake for 45 - 60 minutes in centre of oven
  • test with skewer after 45 minutes
  • when skewer comes out clean, remove from oven
  • cool on wire rack until cold
  • slice with serrated knife and serve
